KANZI® apple brownies with pecan nuts

INGREDIENTS

  • 3 KANZI® apples

  • 120 g of butter

  • 150 g of dark brown sugar

  • 120 g of sugar

  • 2 tsp of vanilla extract

  • 2 eggs

  • 200 g of flour

  • 1 tsp cinnamon

  • 30 g of cacao

  • 2 tsp baking powder

  • 100 ml of cream

  • 125 g of dark chocolate

  • 80 g of pecan nuts

  • Extra: 20 x 25 cm baking tray covered with baking paper

INSTRUCTIONS

  1. Preheat the oven to 180 ºC.
  2. Wash the KANZI® apples and cut them into small cubes. Set 1/3 aside.
  3. Melt the butter and mix this with the granulated sugar, brown sugar, eggs and vanilla extract.
  4. Sift the flour, cinnamon, cacao and baking powder above this and spoon it through the batter. Then stir in the final 2/3 of the apple cubes and then fill the baking tray with the batter.
  5. Bake the brownies until golden brown and cooked in approx. 30 mins.
  6. Bring a saucepan of water to the boil and dip the set aside apple cubes in it. Scoop them into a sieve with a slotted spoon after a minute and leave to cool down. Cooking the apple cubes will stop them from going brown.
  7. Bring the cream to the boil in a saucepan. Chop the chocolate into pieces and put in a bowl. Pour the hot cream across the chocolate and allow to melt while stirring.
  8. Spoon the chocolate glaze across the brownie and divide the remainder of the apple cubes and pecan nuts on top of this. Leave everything to cool down until the chocolate is firm.
  9. Lift the brownie out of the mould using the baking paper and cut into 5 cm squares.
