KANZI® apple tart-biscuits

INGREDIENTS

  • 2 KANZI® apples

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1 tsp ground cardamom

  • 2 tbsp brown sugar

  • 1 tbsp cornflour

  • 2 tbsp butter

  • 225 g butter, at room temperature

  • 200 g soft brown sugar

  • 1 pack of vanilla sugar

  • 2 eggs

  • 350 g wheat flour

  • 2 tbsp cornflour

  • 1 tsp baking powder

  • ½ tsp salt

INSTRUCTIONS

1. Start with the biscuit filling. Dice the KANZI® apples into 1 cm cubes. Mix them together in a bowl with the spices, sugar and cornflour.
2. Heat the butter in a frying pan, then fry the cubed apple for about 3 minutes until lightly coloured. Add 100 ml water and stir until the water becomes a thick sauce. Simmer gently for a further 2 minutes and transfer to a bowl. Allow to cool.
3. Heat the oven to 180°C.
4. Now make the biscuits. In a mixing bowl, cream the butter for 5 minutes together with the soft brown sugar and vanilla sugar until fluffy. Add the eggs one by one while you keep mixing.
5. Sieve in the cornflour, baking powder, flour and salt and mix in all ingredients with a spatula. Knead to form a thick dough.
6. Use an ice-cream scoop or 2 tablespoons to scoop the dough into balls the size of a golf ball (approx. 4 cm). Roll them between your hands to create smooth balls and arrange on a baking tray covered in a baking paper with 10 cm in between. Press the balls a little flatter.
7. Bake the biscuits for about 8 minutes in the centre of the oven. Remove the baking tray and form hollows in the centre of the biscuits by pressing with the back of a spoon. Fill each cavity with a tablespoon of the apple mixture. Return the biscuits to the oven and bake for approximately 10 more minutes.
8. Leave the biscuits to cool for 10 minutes, then place them on a wire rack to cool down completely.
9. Serve the biscuits with some honey or caramel sauce.
