Sweet potato pancakes with KANZI® apple

INGREDIENTS

  • 250 g of sweet potato

  • 3 KANZI® apples

  • 2 eggs

  • 200 ml of milk

  • 1 tsp of vanilla extract

  • 100 g of self-raising flour

  • 1 tsp of cinnamon

  • 30 g of butter

  • 4 tbsp of honey

  • 4 tbsp of sour cream or crème fraîche

INSTRUCTIONS

  1. Peel the sweet potato and cut into wedges. Half submerge them in a pan with water and bring to the boil with a lid on the pan. Boil on a medium heat for approx. 10 mins and drain.
  2. Mash the potatoes and leave to cool for approx. 10 mins.
  3. In the meantime, peel the KANZI® apples and grate one over a bowl. Cut the other two into wedges.
  4. Mix the grated apple through the sweet potato puree. Mix the milk, eggs and vanilla extra through the mixture.
  5. Sift the flour, cinnamon and a pinch of salt on top and mix everything into a liquid batter.
  6. Melt a little of the butter in a frying plan at a time and allow to bubble. Briefly stir the batter and scoop heaps of batter into the pan with a gravy spoon. Bake around 3 pancakes in the pan at the same time.
  7. Turn the pancakes over with a spatula as soon as the tops start to form air bubbles and the edges turn brown. Bake the other side for approx. 1 minute. Continue until you have approx. 15 pancakes.
  8. Then bake the apple wedges in the remainder of the butter for approx. 5 mins until light brown. Add half of the honey halfway through and stir.
  9. Serve 3 pancakes on a plate per person and garnish with the fried apple wedges. Spoon the rest of the honey on top and serve with a spoonful of sour cream
