KANZI® apple pie granola

INGREDIENTS

  • 2 KANZI® apples, peeled, cored, and cut into small cubes

  • 4 cups plain rolled oats (or puffed multigrain blend for gluten free option)

  • 1 cup almonds (or other nuts of choice), roughly chopped

  • 1 tsp ground cinnamon

  • ¼ tsp salt

  • ¼ cup extra virgin olive oil

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

Kick-start your day with this deliciously nutritious KANZI® Apple Pie Granola. Filled with oats, almonds, cinnamon and nourishing KANZI® apples, it's a great meal-prep idea - perfect as a healthy breakfast or tasty snack.

INSTRUCTIONS

  • Preheat the oven to 180C degrees. Line a large baking tray/pan.
  • In a large mixing bowl, combine the chopped Kanzi apples, oats, nuts, cinnamon and salt. Stir to combine evenly.
  • In a separate bowl, combine oil, maple syrup and vanilla. Pour into the Kanzi apple mixture and fold though so the apple is evenly coated.
  • Pour the granola onto the prepared tray and use a large spoon to spread it in an even layer.
  • Bake for about 10 minutes. Press the granola down with your spatula then return to the oven for a further 10-15 min or until lightly golden. Don’t bake the granola too long—just until it’s lightly golden on top, as it will continue to crisp up as it cools.
  • Remove from the oven and let the granola cool completely (for at least 20 minutes) to allow it to clump together.
  • Once cooled, break the granola into pieces with your hands, serve and enjoy.
