KANZI® apple brioche pudding with caramel sauce

INGREDIENTS

  • 3 KANZI® apples, cored, thinly sliced into rounds

  • 250g pkt brioche buns, split, roughly torn in half

  • 2 cups thickened cream

  • 3 free range eggs

  • 1/2 cup brown sugar

  • 40g unsalted butter, melted

  • 4 scoops vanilla ice-cream

  • 1/4 cup caramel sauce

Preparation time: 10 mins + 15 mins standing

Cooking time: 50 mins

INSTRUCTIONS

  1. Preheat oven to 180°C/160°C fan-forced. Grease a 26cm (5cm deep) round baking dish. Arrange brioche and half of the KANZI® apple in dish. Whisk cream, eggs and 1/3 cup sugar in a jug until combined. Pour over brioche. Stand for 10 minutes to soak.
  2. Arrange remaining KANZI® apple over brioche. Combine butter and remaining sugar in a small bowl. Brush KANZI® apple with butter mixture. Bake for 50 minutes, covering with foil if overbrowning, or until golden and set. Stand for 5 minutes.
  3. Serve topped with ice-cream and drizzled with sauce.
