Poke bowl with KANZI® apple & marinated salmon

INGREDIENTS

  • 2 KANZI® apples with the skin on

  • 250 g of sushi rice

  • 2 tbsp of rice vinegar

  • 1 tsp of sea salt

  • 2 tsp of granulated sugar

  • 200 g of fresh salmon fillet

  • 2 tsp of sesame oil

  • 2  avocados

  • 150 g of carrot julienne

  • 200 g of freshly cooked soya beans

  • 1 tbsp of roasted sesame seeds

  • 4 – 6 tbsp of soy sauce

INSTRUCTIONS

  1. Cook the sushi rice in line with the instructions on the packaging.
  2. Spoon the cooked rice into a bowl and stir in the vinegar, salt and sugar. Allow this to cool completely. Stir occasionally.
  3. Wash the KANZI® apples and cut them into thin slices with the skin on.
  4. Cut the salmon into cubes and season with the sesame oil, salt and pepper.
  5. Halve the avocados, remove the pit and scoop the halves out of the skin with a tablespoon and cut into thin slices.
  6. Divide the sushi rice across 4 bowls. Divide the cubes of salmon, apple slices, soya beans, carrot and avocado slices across the rice. Sprinkle with the sesame seeds.
  7. Give each person a small bowl of soy sauce.
