KANZI® apple tacos

INGREDIENTS

  • 3 large wheat or corn tortillas

  • 25 g melted butter

  • 1 tsp cinnamon

  • 2 tbsp sugar

  • 2 KANZI® apples

  • 25 g butter

  • 2 tbsp raisins

  • 1 tsp cinnamon

  • 2 tbsp sugar

  • ½ lemon

  • 150 ml whipping cream

  • 2 tbsp ginger syrup

INSTRUCTIONS

1. Preheat the oven to 180°C.
2. From each tortilla cut 5 circles of 8-9 cm with a biscuit cutter or cut around a cup or saucer.
3. Mix the butter with the cinnamon and sugar in a bowl. Spread butter on both sides of the tortilla circles. Turn a muffin tin with 12 hollows upside down. Fold the circles almost double and arrange them between the muffin hollows. Bake the tortilla circles in the oven for about 8 mins. until crispy.
4. For the filling, dice the KANZI® apples into small cubes. Melt the butter in a frying pan, then fry the cubed apple together with the raisins, cinnamon and sugar for approx. 5 mins. Squeeze over the lemon. Stir regularly. Place in a bowl.
5. Whip the cream until stiff and mix in the ginger syrup.
6. Fill the apple tacos with the apple filling and serve them with the spoon of ginger cream.

Tip for the leftovers: Chop the remaining tortilla into small pieces the size of tortilla crisps. Lay them on a baking tray covered with baking paper and bake for about 8 to 10 mins. until crispy in a pre-heated oven at 180°C.
