KANZI® apple chocolate cake

INGREDIENTS

  • 2 KANZI® apples

  • ¾ cup (165g) brown sugar

  • 125g butter, softened

  • 1 tsp vanilla extract

  • 2 eggs

  • ¾ cup (110g) self-raising flour

  • ½ cup (60g) almond meal

  • ½ tsp bicarbonate of soda

  • 2 tbs cocoa powder

  • 1 tbs apricot jam, warmed

  • Whipped cream or natural yoghurt, to serve

Preparation time: 10 mins (+ 5 mins standing time)

Cooking time: 50 mins

INSTRUCTIONS

  1.  Preheat oven to 180°C. Grease a 20cm (base measurement) round cake pan and line base and side with baking paper. Coarsely grate 1 KANZI® apple. Thinly slice the remaining KANZI® apple.
  2. Use an electric mixer to beat the sugar, butter and vanilla in a large bowl until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Add flour, almond meal, bicarbonate of soda, cocoa powder and grated KANZI® apple and fold to combine.
  3. Spoon into the prepared pan and smooth the surface. Arrange KANZI® apple slices over the top, pressing down gently. Bake for 50 mins or until a skewer inserted in the centre comes out clean. Set aside for 5 mins before transferring to a plate. Brush the top with jam. Serve warm or at room temperature with cream or yoghurt.
