Pasta salad with KANZI® apple & prawns

INGREDIENTS

  • 2 KANZI® apples

  • 200 g of mini penne pasta

  • 200 g of frozen peas

  • 1 cucumber

  • 2 shallots

  • 2 tbsp of apple vinegar

  • 10 g dill

  • 4 tbsp of mayonnaise

  • 50 ml of cream

  • 1 tbsp of ketchup

  • Possibly 1 tbsp of whiskey

  • 100 g of prawns

INSTRUCTIONS

  1. Cook the penne paste al dente, in line with the instructions on the packaging. Add the peas for the last 2 mins of cooking. Drain in a colander and rinse with cold water.
  2. Peel the KANZI® apples and cut them into ½ cm slices. Cut the slices into thin strips.
  3. Cut the cucumber into small cubes. Chop the shallots and put these in a bowl together with the cucumber. Stir in the apple vinegar.
  4. Set aside a few nice sprigs of dill and finely chop the rest.
  5. Create a cocktail sauce of the mayonnaise, cream and ketchup. Season with pepper, salt and possibly a dash of whiskey.
  6. Now mix the pasta with peas in a large bowl with the cucumber, shallots, apple strips and 2/3 of the prawns. Finally, add the dill and the cocktail sauce and thoroughly mix the salad.
  7. Serve the salad on plates and divide the rest of the prawns on top. Garnish with the sprigs of dill.
